Pumpkin overnight oats

When my schedule only allows time for preparing one meal for the upcoming week, I make sure it's breakfast.

These pumpkin overnight oats serve a dual purpose as a delightful dessert, offering a healthier twist on the classic pumpkin pie.

Ingredients:

  • 3 tablespoons of pumpkin puree
  • 1.5 dl/1 cup of rolled oats
  • 1.5 dl/1 cup of oat milk
  • Cinnamon, nutmeg, cloves, and ginger to taste

Instructions: Blend the ingredients together and let them sit in the fridge overnight. Serve with berries and muesli.
